Inspired by Luke from Gilmore Girls' famous pumpkin pancakes with cinnamon butter, here's my vegan version for you to indulge in this fall.

Ingredients
Makes 7-9 pancakes
Pumpkin pancakes
1 1/2 cup (188 g) all-purpose flour
2 tablespoons cane sugar
1 tablespoon baking powder
1 1/2 teaspoons pumpkin pie spice
1/2 teaspoon salt
3/4 cup (180 g) pumpkin puree
1 1/2 cup (375 ml) plant milk of choice
1 tablespoon apple cider vinegar
1 1/2 teaspoon vanilla extract
2 tablespoons avocado oil or melted coconut oil
Toppings
Vegan cinnamon butter, to taste
Maple syrup, to taste
Instructions
Place the dry ingredients in one bowl, and the wet ingredients in another. Mix the ingredients in each bowl until well-combined.
Once mixed separately, combine the mixtures in the larger bowl and mix, but do not over-mix.
Heat pan on medium-high heat and add about two teaspoons of vegan butter or oil.
Reduce the heat to medium and pour in about 1/3 cup of the batter.
Cook until golden on each side and repeat until the batter finishes.
Serve with a scoop of vegan cinnamon butter and a good drizzle of maple syrup.
