Neapolitan Thickshake | Healthy Vegan Neapolitan Shake

My top favorite ice creams growing up were (and still are) pistachio, mint chip, cotton candy, and last but certainly not least, neapolitan!

If we're talking store-bought, I especially wanted neapolitan. It's perfect if you're as indecisive as me, since you get three flavors in one: chocolate, vanilla, and strawberry. But I always preferred mixing them together :)

This recipe is another spin on the ice cream classic, but done in a healthy and vegan way with minimal ingredients. And it makes the perfect addition to your spring brunch!

Let's get started.

RECIPE

Makes 1 large or 2 small smoothies

Ingredients

Chocolate layer

  • 1 1/2 banana, frozen in small pieces

  • 1/2 cup oat milk, add more if you need (I use barista style)

  • 1 scoop vegan chocolate protein (I use Orgain)

Vanilla layer

  • 1 1/2 banana, frozen in small pieces

  • 1/2 cup oat milk, add more if you need

  • 1 scoop vegan vanilla protein

Strawberry layer

  • 1 1/2 banana, frozen in small pieces

  • About 8 small or 5 large frozen strawberries

  • 1/2 cup oat milk, add more if you need

  • 1 scoop vegan vanilla protein

Instructions

Blend the ingredients for each flavor one at a time. When you add the first layer to the glass, set it in the freezer until it’s gotten a little more firm (otherwise the layers will droop into each other). Repeat this with the second layer. When you add the third layer, serve right away. Enjoy!

Lots of love,
