This Herbed Tofu Feta is a dairy-free alternative that's perfect for salads, savory bowls, snack boards, wraps, or wherever you want to add a Mediterranean flare. It's protein-packed, easy to make, great for meal prep, and bursting with tangy, herby goodness.
This recipe is surely a staple in my kitchen and I hope it becomes one for you! I love sharing my staples with you because it somehow makes what I do feel a bit more personal.
It can be used for all kinds of ocassions, whether you're having a dinner party or want to prep easy weekday lunches. Here's a look into how I use it: On Sundays, I love prepping a batch of this recipe along with containers of chopped veggies and cooked quinoa or orzo. Then, when it's time for lunch during the week, I simply toss everything together in a simple vinaigrette or tahini dressing, sprinkle on some pumpkin seeds, and voila—I've got a satisfying and effortless lunch!
Herbed Tofu Feta Recipe
Ingredients
Day 1
5 liters (16 oz) warm water
2 teaspoons sea salt
350-400 g extra firm tofu, drained and cubed to resemble cubes of feta
2 tablespoons Kalamata olive brine
1 tablespoon apple cider vinegar
2 tablespoons capers, drained
1/2 tablespoon dried oregano
1-2 bay leaves
Optional: 1 garlic clove, thinly sliced
Day 2
3 tablespoons nutritional yeast
1 tablespoon dried oregano
3 tablespoons olive oil
1 tablespoon lemon juice (about 1/2 a lemon)
Method
In a liter-sized mason jar (preferred) or another container of choice, add in the warm water and salt. Mix and let dissolve.
Add the rest of the “Day 1” ingredients to the jar. Secure the lid and gently shake to mix, then set in the fridge overnight.
On Day 2, drain most of the liquid from the jar (remove about 425 ml or 14 oz) and add in the “Day 2” ingredients. Secure the lid and gently shake to mix. Serve right away, or, for maximum flavor and texture, set in the fridge for 3-6 hours or overnight. Serve where you like to use feta, like a big Greek salad or in my Mediterranean Bowl!
NOTE
*The finished product (from Day 2) will last about 4 additional days in the jar or other air-tight container.
