Typically I'm not a sweet-for-breakfast kinda person. Given the option, I would totally choose something salty and savory over something sweet in general really. Whenever I have a smoothie in the morning, it's usually followed by avocado toast or some sort of tofu scramble bowl shortly after.
But lately I've actually been waking up in the morning craving oatmeal! But not any kind of oatmeal (oatmeal can be tasteless and boring). The past two weeks or so I've been eating pretty much the same oatmeal everyday, so here it is! Something about it is super satisfying that I crave it despite my "not a fan of sweets for breakfast" attitude.
It's jammed-packed with the nutrients you want to have to start your day – antioxidants from berries, fiber from the oatmeal and flax (as well as tons of omega-3s), probiotics from yogurt, etc. Plus it's just delicious and you wouldn't be able to tell how healthy it is.
It's super simple which is another reason why I love it. I call it my "Easy Like Sunday Morning" oats (even though it's totally a great during-the-week-before work breakfast option).
INGREDIENTS (1 serving):
1 cup oatmeal (I prefer instant oats)
1 cup boiled water
1 cup frozen blueberries
1/2 cup plant yogurt (I used soy yogurt)
3 tbs ground flaxseed
A drizzle of raspberry preserves
A drizzle of almond butter (optional)
You can change the amounts to as much or as little as you want (i.e. more hot water or yogurt if you want the oatmeal to be thinner), but this is my favorite way to make it. Also, I encourage you to use frozen blueberries (don't worry, they'll defrost quick) since they are juicier when mixed, unlike fresh blueberries!
INSTRUCTIONS
Combine the oats and hot water. Add the rest of the toppings and voila! Eat up!
