Beet Latte



September means perfect 70-something degree weather, cooler nights, witnessing nature beginning its shift into a new season, constantly being impressed by the intricately woven spider webs on the trees, sunflowers, and harvesting the abundance of food the garden has grown this summer... like beets!


I’ve been making all kinds of things with beets, since where I am there are lots to be harvested. One of my favorites being this grounding, bright pink beet latte. A warm drink with slightly sweet earthy tones, ginger, cinnamon, and a hint of vanilla.

RECIPE

1 large serving or 2 small servings



Ingredients

  • 1/2 to 1 small beet

  • 1 inch (2.5 cm) piece of ginger

  • 2 cups oat milk

  • 1 tablespoon maple syrup

  • 1/2 teaspoon vanilla extract

  • 1/2 teaspoon cinnamon


Instructions

  1. Blend it until smooth, then strain it through a fine mesh strainer, nut milk bag, or tea towel.

  2. Heat the strained mixture over low heat until warm, or served iced!
