Beannaise - Oil and Fat-Free Vegan White Bean Mayo | FORKPRINT RECIPES


Looking for an oil and fat-free alternative to regular mayonnaise? We got you!


This "Beannaise" is exactly what it sounds like – mayo made from beans, in particular, white beans.


Now you can enjoy the taste of mayo without all the processed oil. It is also egg-free, dairy-free, soy-free, and nut-free. And, it is way more affordable than buying store-bought vegan mayo.


Enjoy this creamy spread on all the classics - sandwiches, burgers, potato salad, or use it in other sauces and dressings.


Not to mention, you'll get a boost of fiber, protein, and vitamins and minerals such as folate, iron, copper, potassium, phosphorus, calcium, magnesium, zinc, and selenium. White beans really pack a punch in nutrients, and do a shockingly good job at making mayo!



RECIPE

Yields 1 cup


Ingredients

  • 15.5 oz or 439g white/navy beans (rinsed and drained)

  • 2 tablespoons vegan milk (I use oil-free oat milk)

  • 1/2 tablespoon vinegar (I use apple cider vinegar)

  • 1/2 teaspoon sea salt

  • 2 teaspoons yellow mustard

  • 2 teaspoons lemon juice

  • 1/4 teaspoon cane sugar or agave nectar

  • optional: onion and/or garlic powder to taste


Instructions

  1. Add all ingredients into a food processor or blender and blend until smooth and creamy.

  2. Store in the refrigerator for up to 7 days in an air-tight container
