4-Ingredient Salted Chocolate-Covered Nut Butter Dates | RECIPE

Valentine's Day is just a few days away, and if you're thinking of doing something sweet for your sweetie (or have a self-love moment), I've got just the thing for you.



Nothing beats receiving a homemade gift. It's so easy to just grab some chocolates from the store but to actually make them is something else.



Making your own chocolates can be tricky, that's why I've developed a super easy (yet so insanely delicious) recipe for you to share with your babe! Only 4 ingredients!



 
INGREDIENTS
  • 14 Medjool dates

  • 2 cups vegan dark chocolate chips

  • 1/3 cup peanut butter, almond butter, or cashew butter

  • sea salt (flaked Maldon sea salt is the best, but fine sea salt will do!)


INSTRUCTIONS
  1. Make a double boiler with water in a small sauce pan and a class bowl sitting on top of it. Pour your chocolate chips in the glass bowl.

  2. Turn the burner on high heat to get the water boiling. Once at a boil, reduce heat to medium. Stir the chocolate chips every so often.

  3. In the meantime, prepare the dates. Remove the stem and make a tiny slice in each date and remove the pit.

  4. Depending on how large or small each date is, spoon in 1/2 to 1 tsp of nut butter where the pit was.

  5. When the chocolate chips have fully melted, dip each date in it using tongs (or a spoon), turning the date until fully coated. When coated, place the date on a greased cooling rack with a sheet of parchment paper underneath to collect the drippings. If you don't have a cooling rack, let the excess chocolate drip off as much as possible and place the coated date directly on the sheet of parchment paper on top of a flat plate/cutting board/sheet pan.

  6. Before the chocolate-covered dates are fully dried, sprinkle a pinch of sea salt on each date. Feel free to sprinkle on other toppings like chopped nuts or fun stuff like dragonfruit powder (for that Valentine's day look, you know).

  7. Refrigerate them until the chocolate shell has fully hardened

  8. Enjoy them at room temperature, chilled, or even frozen! YUM!
